Cantaloupe and Prosciutto are a classic combination. You can add other ingredients including Arugula (pictured here), avocado, or other greens. Simple is best. Just add Olive Oil, SPG (Salt, Pepper, Garlic), and maybe a touch of balsamic glaze.
Brussels Sprouts are my new favorite vegetable. Roasting softens them up while the leafs get extra crispy. This recipe adds only chopped Prosciutto and Jalepenos. I also cut a lemon in half and added to the roasting dish. Squeeze on top when done and drizzle with Olive Oil and SPG.
I love avocado toast! You can make it as simple or elegant as you want!
One of the changes in my diet was not eating much or at all any eggs. But sometimes I miss eating eggs for breakfast. I tried JUST egg and really liked it!
This avocado toast just has toasted bread, JUST egg, avocado, olive oil, and SPG. Simple as that!
